Food sticks to the basket

Cold surface, no oil, or a coating that has begun to wear — and one of those three is worth acting on quickly.

What is happening

Sticking is a minor annoyance with an easy fix, except in one case: if food is sticking because the non-stick coating has started to come away, that is a different problem and the basket needs replacing.

Why it happens

Commonest first. It is almost always the boring one, and a page that walks you through the exotic causes before the obvious one has given you a longer path to a fixed dinner.

    The food went into a cold basket

    Proteins bond to a cool metal surface and release from a hot one. Fish and skin-on chicken are the worst offenders because both have proteins that set on contact.

    A thin oil film keeps food from making direct contact with the metal. Lean food with no surface fat has nothing to provide one.

    A wet batter or a loose breadcrumb coating

    A wet coating adheres to the basket before it sets on the food. Air frying is poor at wet batters generally — there is no hot oil to set them instantly.

    The basket's non-stick coating is damaged or wearing away

    Metal utensils, abrasive cleaning and dishwasher cycles wear the coating. Once it is compromised, food sticks where it has gone and the wear accelerates.

Preheat before the food goes in

Three to five minutes at the cooking temperature. It makes the most difference for fish and skin-on chicken, which are the two things that stick most reliably.

You will know it worked when: The food releases when nudged with a spatula rather than tearing.

Oil the food, not the basket

Brush or toss the food in a small amount of oil. Spraying the basket directly with aerosol cooking sprays is worth avoiding: the propellants and additives in some of them degrade non-stick coatings faster than oil does.

Use a dry coating rather than a wet batter

Flour, egg and then breadcrumbs, pressed on firmly, works well in an air fryer. A thin wet batter does not — there is no hot oil to set it, so it runs before it cooks.

Use a perforated liner

A perforated parchment or silicone liner solves sticking without blocking airflow. Weight it with the food before switching on, and never preheat with it in place.

Replace the basket

A worn non-stick coating does not recover and gets worse. Most manufacturers sell replacement baskets, which is considerably cheaper than a new appliance. Stop using metal utensils and abrasive pads on the replacement, and check whether the manual actually recommends the dishwasher — several do not, despite the parts being described as dishwasher-safe.
