The food came out wrong

Chips and fries come out soggy

Almost always the basket being too full. The steam has nowhere to go and condenses back onto the food.

What is happening

The most common complaint in this appliance class, and the one with the most reliable single answer. Crisping requires the surface of the food to dry faster than moisture arrives from inside; a crowded basket makes that impossible regardless of the time or temperature set.

Narrow it down

Each of these has an answer you already know, and each one rules something out.

Why it happens

Commonest first. It is almost always the boring one, and a page that walks you through the exotic causes before the obvious one has given you a longer path to a fixed dinner.

Seen from above. Air can only crisp a surface it reaches. In a single layer every piece has a gap around it; in a full basket the pieces in the middle are surrounded by other food, and food gives off steam — so the middle steams while the edge browns. Cook in two batches, or shake often enough to keep moving the middle to the edge. Two batches genuinely are faster than one disappointing one.

    Each chip gives off steam as it heats. In a full basket that steam cannot escape past the food above it, so it condenses back onto the surfaces it was trying to leave. The food ends up cooking in its own moisture — which is steaming, not air frying, whatever the appliance is set to.

    Chips settle into a mat within a few minutes. The faces in contact with each other and with the basket get no airflow at all, and stay wet while the exposed faces dry.

    A wet surface must lose its free water before it can begin to dry and brown. Everything spent on evaporating that water is time the food is being steamed rather than crisped, and on a short cook there may not be enough time left afterwards.

    The food is sitting on a solid tray or liner

    A solid surface blocks airflow underneath, so the bottom face of every piece is in contact with trapped steam for the whole cook.

    The temperature is too low

    Below roughly 180°C, surface water evaporates slowly enough that the interior keeps supplying more. The food cooks through and never establishes a dry crust.

The fixes in full

Cook half as much at a time

Fill the basket no more than about two-thirds, in as close to a single layer as you can manage. Two batches of good chips beat one batch of poor ones, and the second batch cooks faster because the appliance is already hot.

Trade-off: Takes longer overall.

Shake at least twice during the cook

Shake at roughly a third and two-thirds of the way through. In an oven-style machine you cannot shake a shelf, so slide the tray out and turn the food with a spatula instead.

You will know it worked when: No two pieces are still stuck together at the end.

Dry the food before it goes in

For fresh-cut chips, rinse off the surface starch and then dry thoroughly with a tea towel. Frozen chips need nothing — do not rinse or thaw them.

You will know it worked when: The surface looks matte rather than glossy going in.

Raise the temperature to 200°C

Crisping needs enough heat to drive moisture off faster than the interior supplies it. If your appliance will not reach 200°C, extend the time and accept a slightly less crisp result.

Trade-off: Watch the colour — golden yellow, not brown.

Use a perforated basket, tray or rack

Air has to reach the underside of the food. A solid baking tray or an unperforated liner defeats the appliance entirely and is a common mistake when moving from a basket machine to an oven-style one.
