Shake a basket; turn individual items; slide a shelf out and move the food around with a spatula. The point is that every face gets airflow at some stage.

Move the top tray to the bottom and vice versa, and turn each tray back to front while you are at it. The front-to-back difference is usually as large as the top-to-bottom one.
- Cook pieces of similar size together
Sort before cooking rather than compromising during. If sizes genuinely vary, put the largest pieces where the airflow is strongest — nearest the fan.
- Learn where your appliance runs hot
Cook a full tray of something uniform — chips, or slices of bread — and look at where it browns first. That map is worth more than any published cooking time, and it does not change.
