The food came out wrong

The breading or coating falls off

Usually the fan, and usually because the coating was never dry enough to set before the airflow got to it.

What is happening

This is a failure mode that barely exists in a deep fryer and is common in an air fryer, and the reason is the difference in what surrounds the food. Hot oil sets a coating from every side within seconds. Moving air takes far longer, and during that time the coating is loose, wet and being blown at.

Narrow it down

Each of these has an answer you already know, and each one rules something out.

Why it happens

Commonest first. It is almost always the boring one, and a page that walks you through the exotic causes before the obvious one has given you a longer path to a fixed dinner.

    The coating had not set before the fan reached it

    A crumb coating holds together once its surface starch and protein have dried and bound. Until then it is loose particles held by moisture, and a fan moving air fast enough to crisp food is more than fast enough to remove them.

    It was turned or shaken before the coating had set

    Handling is far more damaging early than late. Every chart instruction to turn at the halfway point assumes a coating that has already dried.

    Moisture migrating out of the food dissolves the layer holding the crumb on, from beneath, where nothing can dry it. This is why coatings slide off in sheets rather than blowing away in pieces.

    Flour, then egg, then crumb exists because each layer sticks to the next. Crumb applied straight onto damp meat has nothing holding it but water.

    Tempura and beer batters are engineered to set in hot oil, which surrounds them instantly. In moving air they run off the food before they set. Factory-frozen battered products work because they were fried once already; home-made wet batter mostly does not.

The fixes in full

Mist the coating lightly with oil before it goes in

Oil on the crumb helps it set quickly and brown. Spray or brush the FOOD rather than the basket — one manufacturer warns that aerosol propellants can damage the basket coating.

You will know it worked when: The crumb looks damp rather than powdery when it goes in, and gold rather than white when it comes out.

Chill breaded food for twenty minutes before cooking

Time in the fridge lets the coating hydrate and bind to the surface, and firms the whole thing so it survives the first minutes of airflow.

Give it a few minutes before disturbing it at all

The first two or three minutes are when the coating is at its most vulnerable. Do not shake, turn or open the drawer during them.

Dry the food thoroughly before breading it

Kitchen paper, both sides, until the surface is matt rather than shiny. This does more for coating adhesion than anything done afterwards.

Turn at the halfway point, not before

Published chart instructions to flip halfway assume the coating has set. Turning at a third of the time on a breaded product is how it ends up in the bottom of the basket.

Flour, then egg, then crumb

Each layer binds the next. Skipping the flour leaves the egg with nothing to hold onto on a damp surface.

Use a dry crumb rather than a wet batter

Panko or dried breadcrumbs behave in moving air; a pouring batter does not. If you want battered fish from an air fryer, a factory-frozen battered product is the thing that actually works — it was fried once at the factory and the batter is already set.

Trade-off: It is not the same as a chip-shop batter and will not be.
