Why air fryers dry food out, and what to do about it
Dry food is the commonest complaint about air fryers after soggy food, and the two have the same cause pointed in opposite directions. An air fryer is a machine for removing water from the surface of food. When the food is thin, lean or small, it removes water from the middle as well, and no setting turns that off.

The same mechanism, seen from the inside
Fast-moving hot air pulls water off a surface. On a chip that is the point. On a chicken breast the surface dries, then heat keeps arriving, and the water that leaves the surface is replaced by water migrating out of the meat underneath it. Given long enough the drying front works inward.
So dryness is not a fault and it is not a setting. It is the cost of the thing the appliance is for, and the entire technique of air frying lean protein is about paying as little of it as possible.
The real culprit is almost always overcooking, not the air
Muscle protein squeezes water out as it heats, and the loss climbs steeply once the centre goes past its target. A chicken breast taken to 70°C and one taken to 85°C are different foods, and the second lost most of the difference as liquid.
This is why the highest-value piece of equipment for air frying is a probe thermometer rather than a better machine. Published times assume a piece size and a loading that are probably not yours; a thermometer measures YOUR piece. Cook to the target rather than to the clock and most dryness disappears without changing anything else.
It is also why the fix for dryness is never to reduce the safety target. Poultry, minced meat and pork have core temperature requirements that come from national authorities and are not negotiable for texture. The answer is to stop AT the target, not below it.
Geometry decides who suffers
A chicken breast tapers, so by the time the thick end reaches temperature the thin end has been past it for several minutes. Thin things — a flattened escalope, a small fillet, sliced vegetables — have a lot of surface for very little middle, so they lose proportionally more. Large dense things suffer least on the inside and most on the outside, because the surface has to sit in drying air for a long time waiting for conduction to finish the job.
Which is why the interventions that work are mostly geometric. Even out the thickness. Cook the food whole rather than sliced where you can. Cut pieces larger rather than smaller when dryness is the risk, and smaller rather than larger when crisping is.
What actually helps
COOK TO TEMPERATURE, NOT TO TIME. The largest single improvement available, and free if you own a probe.
EVEN THE THICKNESS OUT. Butterfly or flatten a tapering piece. A uniform piece finishes uniformly.
RESTING IS NOT OPTIONAL FOR MEAT. A few minutes off the heat lets the temperature even out and the juices redistribute rather than run out on the first cut. Note that food carries on cooking while it rests, which is a reason to pull it slightly early rather than a reason to distrust the target.
A FILM OF OIL SLOWS SURFACE LOSS. It is a modest effect and it is real.
LOWER AND LONGER IS THE WRONG INSTINCT for most lean protein. It extends the time the surface spends drying. Where a food genuinely benefits from a lower temperature it is usually because the outside was burning before the inside was done, which is a different problem.
FAT PROTECTS. Thighs do not dry the way breasts do; skin-on does not dry the way skinless does. If a food keeps disappointing you, the version of it with more fat is often the answer rather than a better technique.
