Food comes out dry

The appliance works by removing surface water, so drying food out is its failure mode rather than an accident.

What is happening

An air fryer is a machine for taking water off surfaces. On a chip that is exactly what you want; on a chicken breast the same mechanism is what ruins it. Almost every case comes down to a food with no fat to spare, cooked for longer than it needed at a temperature chosen for browning.

Why it happens

Commonest first. It is almost always the boring one, and a page that walks you through the exotic causes before the obvious one has given you a longer path to a fixed dinner.

    A lean food was taken past its point

    Chicken breast, turkey, pork loin, white fish and prawns have almost no intramuscular fat. Once their proteins tighten and expel water there is nothing left to keep them palatable, and the window between done and dry is a couple of minutes wide.

    It was a reheat rather than a cook

    Reheating already-cooked lean food in dry moving air removes what water is left. This is the one job where an air fryer is genuinely worse than a microwave, and the cooking pages for reheating say so.

    The piece was much thicker at one end than the other

    A tapering fillet has finished at the thin end several minutes before the thick end is safe. By the time the thickest part is right, the rest has been overcooked for minutes.

    There was very little in a large chamber

    A single small item in a big drawer is surrounded by far more moving hot air per gram than a full one. It dries out before it browns, which is the opposite of the crowding problem.

The fixes in full

Check the food several minutes before the time is up

Published ranges assume a size and a machine. On a lean food the top of the range is a ceiling rather than a target, and the sensory checks on the cooking page are what actually tell you.

You will know it worked when: The thickest part is just cooked through with no pink, and still gives under a finger.

Cook cooler for longer

A shallower temperature gradient across a piece of meat means the outer layers spend less time far above their ideal temperature. Dropping ten to twenty degrees and adding a few minutes is the standard trade.

Trade-off: Less browning on the surface.

Flatten or fold the piece so it is an even thickness

Gently flattening the thick end of a breast, or folding the tail of a pork fillet under and tying it, does more for the result than any change to time or temperature.

Fill the basket more, not less

A properly spaced single layer rather than one lonely fillet. More thermal mass means the surface dries more slowly relative to the centre.

Reheat lean food gently, or somewhere else

Slice it first so the heat has less distance to travel, use a lower setting, and add a splash of liquid under a loose foil cover. For dense lean leftovers a microwave genuinely does this better; an air fryer wins on anything that should be crisp.

Trade-off: You lose the crisp surface, which was the reason to use this appliance.
