Using a thermometer, and where to put it

Every cooking time in this catalogue, and every cooking time anywhere else, is an estimate for a piece of food that is not the piece you are holding. A probe thermometer measures yours. It is the single piece of equipment that converts this entire product from instructions into reference material, and it costs less than one delivery.

Why a time cannot be right

A published time assumes a piece weight, a thickness, a starting temperature, a quantity, a loading and an appliance. Change any one and the time changes. Your chicken breast is a different shape from the one the chart was written for, your fridge is a different temperature, and your basket has a different amount in it.

This is not a criticism of published times — they are the best available starting point and this product publishes hundreds of them, with their assumptions stated. It is an argument that the time tells you when to START CHECKING and the thermometer tells you when to stop.

Where to put it

THE THICKEST PART, and not touching bone, fat or the pan. Bone conducts differently and will read high; a gap or a pocket of fat reads low. Every food-safety target in this catalogue is specified at the thickest part, and a reading taken anywhere else is not the reading the rule is about.

For a tapering piece such as a chicken breast, the thickest part is the fat end, roughly the middle of its depth. Push the probe in from the side rather than from the top where you can, so the tip sits in the centre of the mass rather than passing straight through.

For a thin fillet, go in from the end horizontally. Pushing a probe down through a fifteen-millimetre fish fillet reads the tray.

For something with a bone, aim beside it. For a whole bird, the thickest part of the thigh where it meets the body, avoiding the bone.

TAKE MORE THAN ONE READING. Two or three spots in different pieces, and believe the lowest one. Air fryers cook unevenly by their nature, and the piece at the back is not the piece at the front.

The two different numbers

There is a temperature the food must reach to be safe and a temperature at which it tastes best, and they are not the same conversation. AirfryerHQ keeps them apart deliberately and so should you.

The safety targets come from national authorities and are held in this catalogue as rules with their own citations — for poultry in the UK that is 70°C held for two minutes, or one of the published time-and-temperature equivalents. They are not adjustable for texture.

The doneness observation on a cooking page — 'this reached about 74°C at the centre' — describes what the cooking produced. It is a separate figure from a separate kind of source, and where a page shows both it labels which is which.

Carryover, which catches everyone

Food keeps cooking after it comes out. Heat already in the outer layers continues moving inward, and the centre of a substantial piece can rise by several degrees while it rests.

The practical consequence is that pulling something exactly at its target and then resting it takes it past the target, which is fine for safety and is the commonest cause of dry chicken. For thick pieces it is reasonable to take the food out slightly before the target and let it arrive during the rest — but only if you then CHECK that it arrived, because 'it will carry over' is a prediction and the thermometer is a measurement.

For thin pieces carryover is small and this does not really apply.

What kind to buy

An instant-read digital probe. They cost very little, read in a few seconds, and that is the entire specification that matters. AirfryerHQ recommends no brand and has no commercial relationship with anybody.

A leave-in probe is a different tool and most air fryers cannot accommodate one — the drawer has to close. Some machines ship with an integrated probe, which is genuinely useful when it exists.

Whatever you use, check it occasionally in iced water, which should read close to 0°C. A thermometer that has been dropped is a thermometer that may be confidently wrong, and confidently wrong is worse than absent for a safety measurement.

What AirfryerHQ has not established

Any carryover figure. How many degrees a given piece rises while resting depends on its size, its density and how hot the surface got, and AirfryerHQ has measured none of it — which is why this page says 'several degrees' and then tells you to check rather than giving you a number to subtract.

The placement guidance is standard practice and is consistent with how the food-safety authorities specify their targets. No thermometer comparison or accuracy testing has been carried out here.
