How food actually gets crispy

Every piece of crisping advice you have ever read — pat it dry, do not crowd the basket, a little oil, shake it — is the same instruction in four disguises. Once you can see what they have in common you can work out the answer for a food nobody has written a page about, which is more useful than another list of tips.

Both pieces are in the same machine at the same setting. While there is liquid water on the surface, everything arriving goes into evaporating it and the temperature sticks at boiling point — below anything that browns. Patting food dry, spacing it out and not crowding the basket all do the same job: they get the wet line moving again sooner. The browning threshold is approximate and the curves are schematic; AirfryerHQ has measured neither.

Water is the whole problem

While there is liquid water on the surface of food, that surface cannot get hotter than about 100°C. All the energy arriving goes into turning water into steam rather than into raising the temperature — the same reason a pan of boiling water stays at boiling point however high you turn the hob.

Browning and crisping do not happen at 100°C. They need roughly 140°C and upward at the surface. So nothing interesting can happen to the outside of a piece of food until the water on it has gone, and every minute spent evaporating that water is a minute the inside is cooking without the outside making any progress.

That is why a wet surface is not a small disadvantage. It is a hard stop.

What the fan is actually doing

Air sitting against a surface barely moves and acts as an insulator, and once the food starts giving off steam that layer becomes humid as well as still. Humid air next to wet food does not dry it; the water leaving and the water arriving are in balance and the surface stays at 100°C indefinitely.

A fan moving air fast enough breaks that layer up and carries the vapour away, so the surface can finally dry and then climb past the boiling point. This is the entire difference between an air fryer and a still oven, and it is why the appliance is measured by airflow rather than by wattage.

It also explains the counter-intuitive part: an air fryer is not hotter than an oven. Most of them top out around 200°C, which any domestic oven exceeds. It is faster at the surface because it is better at drying, not because it is hotter.

Why crowding beats every other mistake

Food loses water as it heats, and that water has to go somewhere. In a sparse basket it is swept away. In a full basket it fills a chamber the size of a shoebox, condenses back onto the cooler surfaces it just left, and the food finishes cooking in its own steam.

This is why the single most effective piece of advice in this entire product is to cook half as much at a time, and why it feels wrong: the machine LOOKS like it has room. Volume is not the constraint. Single-layer area is, plus somewhere for the steam to go.

It also explains why the same recipe works for one person and fails for another with an identically-sized machine. They loaded it differently, and nobody publishes the loading their times assume. AirfryerHQ does, on every figure it holds, because a time without a loading is not a time.

What browning actually is

Two different chemistries, worth telling apart because they want different things. The Maillard reaction is proteins and sugars rearranging into hundreds of new compounds — the brown on a chicken skin, a sausage, a piece of toast, and most of what we mean by savoury flavour. Caramelisation is sugars breaking down on their own, and it is what happens to the cut faces of onions, carrots and parsnips.

Both need a dry surface and real heat, both accelerate sharply as the temperature climbs, and both produce colour and flavour at the same time — which is why colour is a usable proxy for doneness of the OUTSIDE and tells you nothing at all about the inside. That gap is the origin of half the troubleshooting in this catalogue.

Browning is also where the one genuine chemical caution lives. On starchy foods — potatoes, bread, root vegetables — the same reactions produce acrylamide, and UK guidance is to aim for a golden yellow rather than a dark brown. That is a rule this product holds from the authority and applies on every relevant cooking page.

What the oil is for

An air fryer will crisp many things with no oil at all, so it is fair to ask what the teaspoon is doing. Three things, and none of them is frying.

It fills in. A dry surface is microscopically rough and hot air touches only the peaks; a thin film of oil covers the whole surface, so heat arrives everywhere rather than at the high points. That is why oiled chips brown evenly and dry ones go patchy.

It conducts and it carries. Oil moves heat into the surface far better than air does, and it dissolves and spreads the flavour compounds that browning produces. It also gets seasoning to stick, which is not nothing.

What it does not do is make the food fry. There is no bath of hot fat, the food is not submerged, and doubling the oil does not double the crisp — past a thin film it pools in the base, smokes, and makes cleaning worse.

So the four rules are one rule

Pat it dry: remove water before you start, so none of the cook is spent boiling it off. Do not crowd: give the water somewhere to go, and let moving air reach every surface. A little oil: even out heat delivery across a rough surface. Shake or turn: expose the faces that were sitting in the shade against a basket floor.

All four are the same instruction — get the surface dry and keep it in fast-moving hot air — which means you can apply it to anything. A food coming out pale and soft has a surface that stayed wet, and one of those four is the reason.

What AirfryerHQ has not established

The mechanism above is standard food science and is not controversial. What is not established here is anything quantitative: how much water a given food loses, how much airflow is enough, what surface temperature a particular machine actually reaches, or where the loading threshold sits for a given basket. Every one of those is measurable and none of them has been measured for this catalogue.

The 140°C figure for browning is a conventional rounded threshold rather than a sharp line — these reactions run slowly at lower temperatures and quickly at higher ones, and no single number describes that properly.
