How to tell, without a thermometer

  • No ice or cold spot at the centre when the thickest piece is cut open
  • Steaming hot throughout, tested in the middle rather than the edge

If it has not got there: Reduce the temperature by 10–20°C and give it longer. A lower set point lets the centre catch up before the surface passes the point of no return, and it is the single most useful adjustment for cooking from frozen.

Important: If the packaging says the product must be thawed before cooking, follow it. That instruction exists because the manufacturer has tested cooking it from frozen and it did not reach temperature reliably.

What usually goes wrong

A crumb that goes soft from the inside. The mushroom releases water as it heats and the crumb is the only place for it to go, which is why the published temperature is lower and the time is longer than for a solid filling.

Why frozen snack products behaves this way

These products are par-fried before freezing, so the coating already contains the oil it needs and the only requirement is enough dry heat to drive off the surface moisture and re-crisp it. That is precisely what an air fryer does and why times are short — six to fifteen minutes across everything in the group. The interior is the risk rather than the coating: mozzarella sticks fail by bursting when the cheese liquefies before the crumb has set, which is a reason to run them at the shorter end and not to reheat them twice.
