What usually goes wrong
Cooked at the tail and raw at the shoulder, because a whole fish is thickest right behind the head and that is the part nobody checks. Slashing the thickest part twice on each side does more than any change to the time.

- Buy from a reputable retailer rather than a third-party marketplace seller.
- Clean the drawer, the plate and the element after use. Accumulated grease is what smokes, and then what burns.
- Register the appliance with its manufacturer. It is how a recall reaches you.
- Do not rely on the appliance's own thermal protection. A UK recall was issued because it did not operate.

Why white fish behaves this way
White fish is around eighty per cent water held in short muscle fibres with very little connective tissue, so it needs almost no time and has no margin at all. The moment the fibres contract, the water is expelled and the fillet goes from translucent to chalky. It also has no fat to buffer the surface, so hot dry air dries the outside before the inside is warm — which is why nearly every published time for it is under fifteen minutes and why the flake test matters more than the clock.
