Basket or oven style?

These are the two shapes the category has settled into and they behave differently enough that a cooking time written for one does not simply transfer to the other. This is a comparison of two machines rather than two brands, and the differences follow from the geometry.

A dual-basket machine has two narrower drawers side by side, each with its own element and fan, so two foods cook at once but each basket is smaller. The chamber shape decides the cooking answer far more than the brand does. Deep single baskets move a lot of air past a small load; oven-style chambers hold far more but the shelf nearest the element does more work, which is why the guidance for them differs. The fan and element positions drawn here are typical rather than universal, and the four architectures not shown — multicooker, combination microwave, countertop oven and built-in oven — behave like the oven-style case.

The geometry is the whole difference

A basket machine is a small deep drawer with an element and fan directly above it, and food sits on a perforated plate a few centimetres below that element. The chamber is small, the air changes many times a second, and the food is close to the heat. That is why it crisps hard and recovers temperature almost immediately after the drawer goes back in.

An oven-style machine is a cavity with shelves, a fan usually at the back, and elements top and sometimes bottom. It is bigger, which is the point, and bigger means the air moves less aggressively per unit of volume and the cavity takes longer to recover after the door opens.

Neither is better in the abstract. They are different trades between how hard the machine crisps and how much it holds, and everything below follows from that one sentence.

Where the basket wins

Crisping small quantities of anything, which it does harder and faster. Reheating, where speed from cold matters and the quantity is small anyway. Shaking, which is trivially easy — pull the drawer, shake, push it back — and awkward in an oven-style machine where you have to slide a tray out and toss the contents on it.

Recovery. Opening a basket drawer for four seconds costs almost nothing; opening an oven door lets a cavity's worth of hot air out.

And simplicity. There is one place to put the food and one way to load it, and there is no shelf-position decision to get wrong.

Where the oven style wins

Quantity, and it is not close. Several shelves of single-layer food against one drawer's worth, and single-layer area is the real constraint on air frying.

Anything that will not fit in a drawer: a whole chicken, a tray bake, bread in a tin, skewers laid flat, a pizza that is not folded in half.

Seeing the food. A glass door and an interior light mean you can watch browning happen instead of pulling a drawer out to check, and browning is the thing you most want to watch.

And versatility. Most of these machines are also a toaster, a grill and a small conventional oven, which for a small kitchen can replace two appliances rather than adding one.

Why the times differ, and which way

As a general direction, a figure written for a basket machine runs slightly long in an oven-style cavity rather than short, because the air is less aggressive and the recovery slower. AirfryerHQ holds separate observations per appliance type wherever the evidence supports it, and where it holds only a basket figure it says which architecture that figure is for rather than presenting it as universal.

Shelf position matters and nobody tells you this. The top shelf is closest to the upper element and browns hardest; the middle is the general-purpose position; the bottom is gentler and is where something already browning too fast should go. If a recipe fails in an oven-style machine, the shelf is the first thing to change and the temperature is the second.

Crowding still applies, and it applies per shelf. Three shelves each holding a single layer works. Three shelves each holding two layers is the same mistake three times.

How much longer, in figures. The direction of the difference is well supported by how manufacturers write their own charts; the magnitude is not, and AirfryerHQ does not publish a conversion factor between architectures because a factor applied to a real number produces a fake number that looks identical to it.
