Two completely different mechanisms
A microwave excites water molecules throughout the food at once, so the whole item heats more or less together and it heats fast. Because the heating is driven by water, nothing gets much above 100°C and the surface stays wet — which is exactly why microwaved food is hot and limp.
An air fryer heats from the outside in, by drying the surface and then browning it. The middle waits for conduction. That is slower for anything dense and it is the only way to get a crisp surface.
So the two appliances fail in opposite directions: a microwave gives you a hot soggy middle-out result and an air fryer gives you a crisp outside that may still be cool in the centre. Neither is a defect.
The rule, which is short
IF TEXTURE MATTERS, AIR FRYER. Pizza, chips, anything breaded, pastry, roast potatoes, fried chicken. The air fryer is the only domestic appliance that re-crisps, and it is not close.
IF SPEED AND MOISTURE MATTER, MICROWAVE. Soup, stew, curry, rice, pasta in sauce, a dense portion of anything, vegetables, a baby's bottle, anything you want hot in ninety seconds. An air fryer handles wet dense food badly and slowly, and will dry the surface of something that wanted to stay wet.
IF BOTH MATTER, USE BOTH. Microwave to get the middle hot, then two or three minutes in the air fryer to bring the surface back. This is genuinely the best method for a thick portion of leftover roast, and it is the one thing neither appliance's marketing suggests.
The safety part, which is where it stops being about texture
Reheating is governed by a food-safety rule rather than by a cooking chart: leftovers must be steaming hot all the way through, and should only be reheated once. That rule applies whichever appliance you use.
Each appliance has a characteristic way of failing it. A microwave heats unevenly and leaves cold spots, which is why standing time and stirring are in the instructions and are not optional. An air fryer heats the surface long before the centre, so a thick portion can be visibly, audibly sizzling and still be cool in the middle — which is a more convincing kind of wrong.
For dense leftovers this is the strongest argument for the combination above. It is also why the reheating pages in this catalogue tell you to check the centre rather than trust either machine.
Can one replace the other?
An air fryer does not replace a microwave for anyone who reheats liquids or dense food, and it is much slower for the everyday case of making one plate of something hot.
A microwave does not replace an air fryer for anyone who wants anything crisp.
A combination microwave with an air-fry mode is a genuine third option and is in this catalogue as its own architecture. The honest position on those is that the air-fry mode is generally less capable than a dedicated machine — a cavity built for microwaves is large and not built around airflow — and that for a kitchen with room for one appliance rather than two it can still be the right answer.
