Specification lists exist to make appliances comparable, and they mostly succeed at making them look comparable. This is an account of which figures change what happens to your food, which are weak proxies worth glancing at, and which are there because a table needed another row.

The one that matters most is not on the box
Usable single-layer area decides how much food a machine cooks well, and no manufacturer in this catalogue publishes it. Wattage: a weak proxy for one real thing
Rated power tells you the maximum rate the element can put heat in. It does not tell you how well the machine crisps, because crisping is governed by airflow, and no manufacturer in this catalogue publishes an airflow figure for anything.
What it correlates with is RECOVERY: how quickly the chamber gets back to temperature after cold food goes in. That matters most for large loads and for cooking from frozen. It is a real effect and a weak proxy.
It is not an efficiency figure and a higher number is not automatically worse for your bill — a machine that reaches temperature faster spends less time at full draw. Measured testing bears that out: across the air fryers one test house measured, a year of three cooks a week separated the most and least efficient by about four pounds. Wattage is a poor thing to shop on for energy reasons.
The useful range is narrow. Nearly everything sold sits between about 1,400W and 2,600W, and within that band the difference is smaller than the difference made by how full you load the basket.
Temperature range: check the bottom, not the top
Almost all air-fryer cooking happens between 160°C and 200°C, and essentially every machine covers that. A maximum above 200°C buys little, because the mechanism is about moving air rather than about heat, and food browns quickly enough at 200°C already.
The end worth checking is the BOTTOM. A machine that goes down to 40–60°C can dehydrate, prove dough and hold food warm. One that stops at 80°C cannot do any of them, and no rack or accessory will fix that. This catalogue holds one model publishing a dehydrate chart at 60°C and another whose range starts at 80°C — the second cannot dehydrate whatever it is sold with.
Adjustment increments matter less than they look. Five-degree steps against ten is not a difference you will notice against the variation between two nominally identical machines.
Modes: two are capabilities, the rest are presets
Most machines advertise between six and twelve modes and most of them are a stored temperature and time. 'Chips' is 200°C for eighteen minutes, and you can set that yourself. Reading published mode tables in this catalogue, two differently-named modes on the same machine frequently have identical set points.
Two are genuinely different things rather than presets. DEHYDRATE runs the fan at a low temperature for hours and needs the low end of the range to exist. SYNC on a dual-zone machine coordinates two drawers to finish together, which is real logic rather than a stored setting — and it works by DELAYING the shorter cook rather than accelerating anything.
A PROBE, where a machine has one, is worth more than every preset combined, because it is the difference between cooking to a time and cooking to a temperature.
The number of modes is not a specification. What each mode does is, and this catalogue records set points and ranges per mode wherever a manual publishes them.
The practical ones that decide whether you keep using it
WHICH PARTS ARE DISHWASHER SAFE, and specifically which. Manufacturers differ and several permit only the drawer and crisper plate. A machine whose parts must all be hand-washed gets cleaned less often, and accumulated grease is what smokes and eventually what burns.
FOOTPRINT AND CLEARANCE. Measure the worktop, then remember it needs clear space above and behind for the outlet and cannot sit under a wall cabinet with hot air discharging into the underside of it.
REPLACEMENT PARTS. The coating is the wear item and it fails before the motor does. Whether you can buy another basket in three years decides how long the appliance lasts — and manufacturers differ enormously here. One in this catalogue publishes part references with per-model compatibility in its own store; most publish nothing at all.
NOISE, which nobody publishes and which is real.
The ones that are mostly table filler
Number of presets. Cord length. Weight, unless you are lifting it into a cupboard. Maximum temperature above 200°C. 'Rapid air technology' and its equivalents, which are brand names for the mechanism every air fryer uses.
Colour and finish, which are real considerations and are not specifications.
None of these is a lie. They are simply not things that change what happens to your dinner, and a comparison table that gives them equal weight with usable area has flattened the decision rather than helped it.
