What actually matters when choosing an air fryer

This is not a list of products and there is no best air fryer at the end of it. It is an account of which specifications change how a machine cooks and which are there to fill a comparison table, written by somebody with no commercial reason to prefer one answer.

Both drawers hold the same number of litres. The shallow, wide one cooks twice as much, because what limits an air fryer is the base area available for a single layer — the space above the food is not capacity, it is the room the air needs. Almost no manufacturer publishes base dimensions, which is why AirfryerHQ records usable area as not published rather than estimating it.

The thing that matters most is not published

How much food an air fryer can cook well is set by the area available for a single layer, because the mechanism needs air to reach every surface. Litres measure the volume of the drawer, which includes all the space above the food that you must not fill.

Two machines advertised at five litres can hold noticeably different amounts of chips, depending on whether the drawer is tall and narrow or shallow and wide. The base dimensions would tell you and almost nobody prints them: of the twenty-nine models in this catalogue, none publishes a usable cooking area, and most do not publish the chamber dimensions either. AirfryerHQ records that as 'not published' rather than estimating it, because an estimate would be indistinguishable on the page from a measurement.

What you can do about it: if you can see the machine, look at the base rather than the number. If you cannot, treat litres as a rough guide only, and assume a family-sized machine feeds a family one component of a meal.

Architecture, which decides more than the brand

Single basket, dual zone, flex drawer, oven style. This is the biggest decision and it is a question about how you cook rather than about quality.

One basket if you cook one thing at a time and want the most single-layer area per pound and per centimetre of worktop. Two drawers if your problem is cooking two different things — not if your problem is quantity, because two drawers is not more space. A flex drawer if you sometimes need one big cavity. Oven style if you cook in quantity, want to see the food, or want the machine to replace a grill and a toaster as well.

Wattage: mostly a proxy, and for what

Wattage tells you the maximum rate the element can put heat in. It does not tell you how well the machine crisps, because crisping is governed by airflow, and no manufacturer in this catalogue publishes an airflow figure for anything.

What it correlates with is recovery: a higher-rated machine gets back to temperature faster after cold food goes in, and that matters most for large loads and for cooking from frozen. It is a weak proxy and it is the only one on the box.

It is not an efficiency figure and a higher number is not worse for your bill in any simple way — a machine that reaches temperature faster spends less time getting there. Anyone comparing running costs from wattage alone is comparing the wrong thing; how long the element is actually ON is what matters, and nobody publishes that either.

Temperature range, and the bit at the bottom

Almost everything in this catalogue is cooked between 160°C and 200°C, and essentially every machine on the market covers that. A maximum above 200°C is of limited use, because the mechanism is about airflow rather than about heat and food browns fast enough at 200°C already.

The end of the range worth checking is the BOTTOM. A machine that goes down to 40 or 50°C can dehydrate, prove dough and keep food warm; one that stops at 80°C cannot. If you have no interest in any of that, it does not matter at all.

Adjustment increments matter less than people expect. Five-degree steps against ten-degree steps is not a difference you will notice against the variation between two identical machines.

Modes: two useful, most not

Most machines advertise between six and twelve modes. Almost all of them are a temperature and a time preset — 'chips' is 200°C for eighteen minutes — and you can set that yourself.

Two are genuinely different things rather than presets. DEHYDRATE runs the fan at a low temperature for hours and needs the low end of the range to exist. SYNC on a dual-zone machine coordinates two drawers to finish together, which is real coordination logic rather than a stored setting.

A PROBE, where a machine has one, is worth more than all the presets put together, because it is the difference between cooking to a time and cooking to a temperature.

Everything else — bake, roast, grill, reheat, air fry — is worth checking on the specific model's page rather than assuming. Where AirfryerHQ holds a manual it records what each mode's set point and range actually are, and the answer is often that two differently-named modes do the same thing.

The practical things that decide whether you keep using it

DISHWASHER-SAFE PARTS, and specifically which. Manufacturers vary and several permit the drawer and the crisper plate while forbidding everything else, which is the answer you want anyway. A machine whose parts must be hand-washed is a machine that gets cleaned less often, and accumulated grease is what smokes and eventually what burns.

FOOTPRINT AND CLEARANCE. Measure the worktop, then remember that these need clear space above and behind for the outlet and cannot live under a wall cabinet with the door shut. This is the commonest practical regret.

NOISE, which nobody publishes and which is real. If you can hear one running in a shop, that is worth more than a specification.

AVAILABILITY OF REPLACEMENT BASKETS. The coating is the wear item and it fails before the motor does. Whether you can buy another basket in three years determines how long the appliance lasts, and it is worth thirty seconds on the manufacturer's spare parts page before buying.

REGISTERING IT when you get it. It is how a safety notice reaches you, and this is a category that has had recalls.
