What air fryers are good at, and what they are bad at
Nearly every advantage claimed for an air fryer is real under some conditions and false under others, and the conditions are almost never stated. This page states them. It is written on the assumption that you are deciding whether to buy one, keep one, or stop using the oven — not on the assumption that you have already decided.

The three things it is genuinely better at
REHEATING ANYTHING THAT SHOULD BE CRISP. This is the least-argued advantage and the most consistently useful one. A microwave steams a pizza base; an oven needs a quarter of an hour to warm up before it can do the job. An air fryer does it in five minutes from cold, and it is the only appliance in a domestic kitchen that does it well.
SMALL QUANTITIES OF CRISP FOOD, ON DEMAND. One portion of chips, a couple of chicken thighs, six wings. There is no preheat penalty worth mentioning on most machines, the chamber is at temperature within a minute or two, and nothing about the process scales down badly the way a big oven does.
A DRY, CRISP SURFACE ON FATTY FOOD. Wings, skin-on thighs, sausages, bacon. The airflow strips surface moisture faster than a domestic oven can and the fat drains away from the food rather than pooling around it. This is the thing the appliance does that a fan oven genuinely cannot, and it is the reason the category exists.
Speed: true for the food, misleading for the meal
The usual claim is that air frying is faster than an oven. For the cook time of one small batch that is often true, and most of the difference is preheating rather than cooking: a fan oven takes eight to twelve minutes to reach temperature and most air fryers take one or two, or none at all — several manufacturers state in their manuals that preheating is not necessary.
For a meal, it frequently is not true. An air fryer basket that holds one layer holds roughly a quarter of what an oven shelf holds, and cooking four sequential batches takes longer in total than one oven load, with the added problem that the first batch is cold by the time the last one is out. The crossover point is somewhere around two portions on most single-basket machines, and it is the single most important number nobody publishes.
There is also a cost hidden inside the speed. Because it is fast and small, an air fryer encourages cooking components separately — chips now, chicken next — where an oven cooks them together. That is more attention, not less.
Energy: a real saving, with a condition on it
Both appliances turn essentially all their electricity into heat, so there is no efficiency difference in any deep sense. The saving comes from heating a much smaller volume and from not preheating it for ten minutes first, and for small quantities it is substantial.

One thing worth knowing about the numbers you will see quoted: a wattage on the back of an appliance is its MAXIMUM draw, not its average. A 1,700W air fryer does not draw 1,700W for the whole cook — it cycles the element to hold temperature, and how much of the time it is actually on depends on how full it is and how cold the food was. Every running-cost figure published anywhere, including the estimate in our own calculator, is built on an assumption about that duty cycle.
Capacity, and why litres mislead
This is the commonest disappointment and it is caused by how the appliances are sold. Capacity is advertised in litres, which measures the VOLUME of the drawer. What determines how much food an air fryer can cook well is the AREA available for a single layer, because the mechanism needs air to reach every surface and food stacked on food defeats it.
A tall five-litre drawer and a shallow five-litre drawer cook completely different amounts. Manufacturers rarely publish the base dimensions, so the useful figure is usually not available at all — AirfryerHQ records it as not published rather than estimating it, and most model pages in this catalogue say exactly that.
The practical consequence: a machine sold as feeding four people generally feeds four people one component of a meal. Dual-zone machines address this by having two drawers rather than one bigger one, which helps with variety more than it helps with volume.
The drawbacks that do not appear in reviews
NOISE. A fan moving air fast enough to do this job is audible, typically a constant fan noise for the whole cook plus the click of the element cycling. It is louder than an oven, and in an open-plan kitchen it is noticeable. A change in that noise is worth attending to rather than ignoring — a new rattle or grinding is a fault, not a quirk.
COUNTER SPACE. These are large objects that need clearance above and behind them for the air outlet, and they are not appliances you put away, because an appliance you put away is one you stop using. A dual-zone machine on a small worktop is a genuine imposition.
SMOKE AND SMELL. Fat rendering onto a hot surface directly under an element produces smoke, and this is normal rather than faulty for bacon, sausages and fatty mince. It also means the appliance needs cleaning more often than people expect, because accumulated grease is what smokes next time and eventually what burns.
COATINGS AND PARTS. The non-stick coating on the basket and crisper plate is a wear item, metal utensils damage it, and replacement baskets are not always available for the life of the machine. Peeling coating is the point at which a machine is finished, and it arrives sooner than the motor fails.
THE LEARNING CURVE IS REAL. Published times assume a loading you probably are not using. The first month with an air fryer involves a certain amount of burnt outsides and raw middles, and almost all of it is the same mistake: too much food in the basket.
What it is simply the wrong tool for
Wet batter, because there is no hot oil to set it and it runs off before it cooks. Anything that should stay moist at the surface, because removing surface moisture is the entire mechanism. Large dense items, because the surface cooks fast and the middle still waits for conduction. Anything you want to cook gently and evenly, such as a custard or a slow braise.
And a real seared crust on a steak, because metal contact browns faster than moving air does. Air frying a steak is a compromise; it is worth knowing which way the compromise runs before you make it.
A microwave still wins outright for reheating anything wet, anything dense, and anything you want hot in ninety seconds without caring about texture. The two appliances are complements and the air fryer does not replace one.
What AirfryerHQ has not established
None of this is measured. There is no metered energy comparison, no sound-level measurement, no batch-crossover experiment and no longevity data behind the paragraph about coatings — that last one rests on how the failure is described in manufacturer cleaning instructions and on how often it appears as a troubleshooting question, which is weaker than it sounds.
The claim most worth treating carefully is the crossover point where an oven becomes the better choice. Two portions is a reasoned estimate from basket areas and oven shelf sizes, not a finding, and it will move with the machine.
