Bread

Toasted in a couple of minutes and the fastest thing in the catalogue to burn, or baked from dough for the best part of an hour.

What it does in fast-moving hot air

Baked bread has already lost its surface water once and set into a porous starch foam, so there is nothing to drive off before browning starts and browning starts almost immediately. That is why two minutes is a time and three minutes is a warning. In a basket machine there is a second problem the published grill figure does not have: a slice of bread is light, flat and exactly the shape a fan lifts, and it lands on the element. Anything toasted in a drawer machine needs weighing down or a rack over it. Dough is the opposite case: it has all its water still to lose, bakes cool and slow, and rises towards the element as it does, which is why the published loaf figures come with an instruction to shape it flat.

Why the cut matters

Bread is three different jobs here. Thick hand-cut slices from a baguette or ciabatta, brushed with oil, take two to three minutes on direct heat; part-baked rolls take a few minutes more; and a loaf baked from dough takes most of an hour at a much lower setting. 'Can you toast bread in an air fryer' is a question with a genuinely conditional answer.

  • Grilled bread — One manufacturer grills 4cm slices brushed with oil for two to three minutes, and does not say whether the loaf is fresh.
  • Part-baked rolls — One manufacturer prints six to eight minutes at 180–200°C, and it is one of the fastest useful things this appliance does.
  • A loaf of bread — Thirty-three to sixty-five minutes at 150–160°C depending on the weight of the loaf, with a published warning about the dough rising into the element.
