Built-in ovens, countertop ovens and multicookers increasingly advertise an air-fry setting, and the obvious question is whether it makes a separate appliance unnecessary. The answer follows from one number nobody puts on the box: the ratio of how much air the fan moves to how much space it has to move it around.

What the setting usually is
In most built-in ovens, air fry is the fan at or near maximum with a particular element combination and often a higher-than-usual set point, sometimes with a recommendation to use a perforated tray. That is a real programme doing a real thing, and it is not a gimmick.
What it cannot change is the cavity. A dedicated air fryer moves a large volume of air around perhaps five litres; a built-in oven moves a comparable volume around sixty or seventy. Air near the food is replaced far less often, and the cavity takes minutes rather than moments to recover after the door opens.
So the mode narrows the gap and does not close it. That is a statement about physics rather than about the manufacturer.
What you gain, which is genuine
Area, and a great deal of it. A perforated tray on an oven shelf holds several times what a drawer holds in a single layer, and single-layer area is the constraint that actually limits air frying. For a family quantity of chips the oven's air-fry mode can beat a small dedicated machine simply by not needing three batches.
No extra appliance and no worktop. For a small kitchen this is not a minor consideration.
And it is a real improvement on the same oven's ordinary fan setting for anything you want crisp, which is worth using even if you also own an air fryer.
What you give up
Preheating. A large cavity takes eight to twelve minutes to get there, and that is the whole of the air fryer's speed advantage handed back. For one portion the dedicated machine wins decisively and the comparison is not close.
The hardest crisping. Fatty foods with skin — wings, thighs — are where the difference shows most, because they need sustained fast air at the surface to render and dry.
Recovery, and therefore shaking. Every time the door opens the cavity cools.
Energy for small quantities. Heating seventy litres to cook two portions is the case where the dedicated appliance's saving is at its largest.
